Theodore Stefos learned the art of making botargo the traditional way from relatives and fishermen, while he was growing up on the shores of the Messolonghi-Aitolikon lagoon. He acquired remarkable knowledge and expertise in botargo processing. For several decades his limited production of homemade botargo was renowned and highly appreciate by a small local circle and enjoyed only by those fortunate few.
In 2008, his brother George and a team of food specialists and management experts joint forces in order to open the company to the Hellenic and global market. Together they envisaged a way of sharing with the world the precious lagoon products by coupling tradition with innovation.
STEFOS Bros. & Co L.P. was established in 2008 Registered in Aitolikon, Messolonghi, in the Aitoloakarnania province of Western Greece, the company built pioneer facilities for the processing, packaging and marketing of marine products, caught at sea or in inland waters, and of aquaculture products.
